Tanjia – both the name for both the clay pot used for slow-cooking and the finished stew – is a tender, aromatic dish, packed with juicy meat and vegetables. Learn how to make this classic Moroccan meal alongside a salad or cocktail following step-by-step instructions from Khalid, who will guide you through the recipe from his riad.

  • Please note that the start times for this virtual experience are scheduled in British Summer Time (BST). Please be aware and adjust the start time to your time zone if you are not based in a country where BST is observed.


What you’ll need...

  • You will need a computer or laptop with a working webcam. A mic isn't necessary but you are encouraged to use one in order to interact with the chef.


  • 1kg of beef or chicken (with bones if possible)
  • 1 teaspoon cumin
  • 1 teaspoon of ghee (preserved butter)
  • 1 preserved lemon (can be substituted for 1 regular lemon and salt)
  • 1 teaspoon of threaded saffron
  • 2 tablespoons of olive oil
  • 1 big glass of water
  • 1 clove of garlic 

Note: Khalid advises that it is better to cook with chicken or beef on the bone (chicken legs, shoulder of beef, or veal shank) as that is what gives the dish its unique and delicious flavour. However, diced beef or chicken can be used as a substitute if preferred.

you misuse or abuse the services provided at the experience, including by behaving in an offensive or disorderly manner.



4.1 To the extent permitted by applicable laws, the experience is provided on an “as is” and “as available” basis. Our liability is limited to the maximum extent permitted by law but nothing in these terms is intended to exclude or limit any warranty or liability which may not be lawfully excluded or limited in your country of residence (if any).

4.2 We accept no responsibility for any of your personal property brought to the experience.



5.1 This contract is between you and us and no other person shall have any rights to enforce any of its terms.

5.2 Each of the paragraphs of these terms operates separately. If any court or relevant authority decides that any of them are unlawful or unenforceable, the remaining clauses will remain in full force and effect.

5.3 These terms are governed by English law but you will benefit from any mandatory provisions of the law of the country in which you are resident. 

5.4 You can bring legal proceedings in respect of these terms in the English courts. However, as a consumer you can bring legal proceedings in respect of these terms in a court with jurisdiction according to the laws of your country of residence.
