Bring the sights and sounds of Marrakech into your home with this virtual tanjia cooking class. You’ll be hosted by Morocco-based chef Khalid Berdouzi, who took us on a tanjia tour of the Marrakech medina in the Culture Trip original series Hungerlust.

Tanjia is the name for both the clay pot used for slow-cooking and the finished stew. Following the French cooking style à l’étouffée (a stewing technique that involves steaming to create pressure), the meat-focused dish can be made with anything from rabbit to calf’s tail (or, as in this class, beef), and is infused with fragrant spices such as saffron and cumin, along with zesty preserved lemons and garlic.

The result is a gorgeously tender dish, packed with juicy meat and vegetables. Khalid Berdouzi owns a guesthouse in the heart of Marrakech, and cooking tanjia – a meal best shared with friends – is his favourite way to connect with his guests. His passion for the dish, and its importance to the regional culture of Marrakech, makes him the perfect host to guide you.

What you’ll need...

  • You will need a computer or laptop with a working webcam. A mic isn't necessary but you are encouraged to use one in order to interact with the chef

  • The ingredients for the event:

    • 1kg of beef or chicken (with bones if possible)
    • 1 teaspoon cumin
    • 1 teaspoon of ghee (preserved butter)
    • 1 preserved lemon (can be substituted for 1 regular lemon and salt)
    • 1 teaspoon of threaded saffron
    • 2 tablespoons of olive oil
    • 1 big glass of water
    • 1 clove of garlic 

Note: Khalid advises that it is better cook with chicken or beef on the bone (chicken legs, shoulder of beef, or veal shank) as that is what gives the dish its unique and delicious flavour. However, diced beef or chicken can be used as a substitute if preferred.

you misuse or abuse the services provided at the experience, including by behaving in an offensive or disorderly manner.



4.1 To the extent permitted by applicable laws, the experience is provided on an “as is” and “as available” basis. Our liability is limited to the maximum extent permitted by law but nothing in these terms is intended to exclude or limit any warranty or liability which may not be lawfully excluded or limited in your country of residence (if any).

4.2 We accept no responsibility for any of your personal property brought to the experience.



5.1 This contract is between you and us and no other person shall have any rights to enforce any of its terms.

5.2 Each of the paragraphs of these terms operates separately. If any court or relevant authority decides that any of them are unlawful or unenforceable, the remaining clauses will remain in full force and effect.

5.3 These terms are governed by English law but you will benefit from any mandatory provisions of the law of the country in which you are resident. 

5.4 You can bring legal proceedings in respect of these terms in the English courts. However, as a consumer you can bring legal proceedings in respect of these terms in a court with jurisdiction according to the laws of your country of residence.
