Sushi is as much an artform as a tasty snack, and in this eye-opening class you’ll get to put your own personal twist on the classic Japanese dish. Your host, chef Raffaella De Vita, one of the stars of Culture Trip's award-winning Hungerlust video series, will guide you through the experience, showing you the various techniques involved in making Mediterranean-style sushi.

Specifically, you’ll learn how to make nigiri, classic vegetarian sushi roll, and an Italian version that's made from ingredients such as potatoes, parmesan and mussels alongside the usual elements like seaweed, sushi rice and soy – creating a delectable fusion inspired by Raffaella’s Puglian roots. You'll also make pesto to serve alongside the sushi. For each dish, she'll walk you through every step of the method, from the stages of preparation to the final touches, using the same utensils Raffaella does in her kitchen. Then, the best part: devouring your creations, either with chopsticks or a knife and fork – don’t worry, no one’s watching.

About the host

Born in Puglia but now based in Tokyo, chef Raffaella Da Vita combines traditional Japanese techniques with Italian flavours to create Mediterranean sushi. Her childhood in Italy left a lasting impression on her culinary outlook, and many of her current dishes are infused with some of her favourite ingredients from the meals she ate growing up. Raffaella’s passion shines through in her innovative take on sushi, blending the cuisines of southern Italy and Japan to make a dish that tells her personal story. If you can't wait for the class itself, watch the episode of our Hungerlust video series in which Raffaella stars for a flavour of what to expect.

What you’ll need

  • A laptop or phone with built-in microphone and video
  • Cooking utensils such as a filleting knife, a fish scale, bamboo mats, fish-bone tweezers and a blender
  • Essential ingredients includesushi rice; nori seaweed papers; rice vinegar; soy sauce; marinated ginger; wasabi paste; tomatoes; mozzarella cheese; basil leaves; parsely leaves; potatoes; avocado; mussels (or clams); red prawns; seabream or any other white fish; langoustines (or a fillet of salmon or tuna); scallops; quail eggs and a lemon
  • Essential equipment includes: a filleting knife; a potato peeler; a fish scale (or aluminum paper); a chopping board; bamboo mats; kitchen wrap; fish-bone tweezers; a transparent pot cover; 10 small bowls or containers; a hangiri (or a small square pan for mixing rice with vinegar); a grater and a blender
  • A full list of ingredients and equipment needed will be sent out with the confirmation email upon booking.

  • Participants must be aged 18 years or over.


  • Online classes are held over Zoom. You will be given the link prior to the class.


  • The host can speak English, Italian and basic Japanese.

1.2 The price for the experience is included in the booking process and is inclusive of VAT. Any other costs incurred by you in attending the experience shall be solely borne by you.


1.3 These terms apply from the time you make your booking until (and including) the date you attend the experience.


1.4 Purchase of a ticket means you consent to filming, photography and sound recording which may include you as a participant, unless expressly stated otherwise.




2.1 Once purchased, tickets cannot be exchanged, resold or refunded.




3.1 We may immediately cancel your right to attend and/or remove you from the experience at any time: (a) if you breach any of these terms (although for non-serious breaches we will first give you the opportunity to put things right); (b) if you breach any applicable laws, rules and regulations; and/or (c) you misuse or abuse the services provided at the experience, including by behaving in an offensive or disorderly manner.




4.1 To the extent permitted by applicable laws, the experience is provided on an "as is" and "as available" basis. Our liability is limited to the maximum extent permitted by law but nothing in these terms is intended to exclude or limit any warranty or liability which may not be lawfully excluded or limited in your country of residence (if any).

4.2  We accept no responsibility for any of your personal property brought to the experience.




5.1 This contract is between you and us and no other person shall have any rights to enforce any of its terms.


5.2 Each of the paragraphs of these terms operates separately.  If any court or relevant authority decides that any of them are unlawful or unenforceable, the remaining clauses will remain in full force and effect.


5.3 These terms are governed by English law but you will benefit from any mandatory provisions of the law of the country in which you are resident.


5.4 You can bring legal proceedings in respect of these terms in the English courts. However, as a consumer you can bring legal proceedings in respect of these terms in a court with jurisdiction according to the laws of your country of residence.
