About the Host

Host Dan Hong Zheng, who also goes by the name of Denise, was born close to Taiwan in the South China Sea. She follows in the culinary footsteps of both her grandma and father, both talented chefs who taught her to cook at a young age. In 2001 she submitted an asylum claim in the UK and more than 19 years later, is still waiting to get refugee status. With a particular fondness for seafood and vegetables in her dishes, Denise is passionate about sharing the traditions of Chinese food.

What you'll need

Ingredients for the cabbage dumplings:

For the dough:

  • 125g plain flour
  • 50ml warm water

For the filling:

  • ½ sweetheart cabbage
  • ½ tbsp salt
  • ½ knuckle-sized piece of ginger
  • 1 tbsp vegetable oil
  • 1 tsp sesame oil
  • ½ tbsp mushroom oyster sauce

Ingredients for the chicken wings:

  • ½ tsp sesame seeds
  • 400g raw chicken wings (or meat substitute)
  • 1-3 sprigs of fresh coriander

For the sauce:

  • ½ tbsp Chinese cooking rice wine (or 1 tbsp sesame oil)
  • 2 ½ tbsp light soy sauce
  • 2 ½ tbsp hot water
  • 1 ½ tbsp granulated sugar (or honey)
  • 1 tsp black vinegar
  • ½ tsp mushroom powder (or dried mushrooms chopped finely)
  • ¼ tsp white pepper (1 small pinch)
  • ½ tsp Chinese cooking wine

For the dipping sauce:

  • 2-3 cloves of garlic
  • 1 spring onions
  • 2 sprigs of coriander
  • 1 tsp vegetable oil
  • 1 tsp soy sauce
