In a nutshell

Slip on your apron and follow friendly host Majeda on-screen as she demonstrates how to make Syrian fattoush, a hearty fried-bread salad; and harrak isbaao, a warming pasta and lentil dish. As your pitta sizzles on the pan and your tamarind turns to a soft pulp, Majeda will provide valuable feedback so you can easily make the dishes again for your friends and family.

This is one of many Migrateful cook-alongs taught by refugees, asylum seekers and migrants. The London-born organisation not only helps to support the lives of these talented cooks but breaks down social and linguistic barriers, offering a glimpse into their world as they share anecdotes, traditions and culinary practices that are ingrained into their culture.

About the host

Host Majeda, a human rights activist from Syria, was forced to flee her country after being imprisoned by the regime for organising an initiative to feed Syrians whose homes had been bombed by the government. In 2017, she was granted refugee status in the UK and uses food to continue her campaigning, sharing her stories and enlightening people on the Syrian situation while introducing them to her favourite Syrian dishes.

What you'll need

Ingredients for Fattoush Salad:

  • 1⁄4 lettuce (any kind of lettuce will do – iceberg or romaine suggested)
  • 2 medium tomatoes
  • 1⁄2 medium cucumber
  • 1⁄4 red onion or 1⁄4 bunch spring onions
  • 1⁄4 bunch of parsley
  • 1⁄4 bunch of dill
  • 6 radishes
  • 1 bell pepper (or 2 halves – ideally different colours)
  • Small bunch of fresh mint
  • 1 tsp dried mint
  • 1 flatbread (tortilla, Syrian flatbreads or pitta bread), torn into 4cm squares
  • 1 tsp sumac
  • 2 tbsp pomegranate molasses
  • 11⁄2 tbsp vinegar (cider/apple or balsamic)
  • Salt to taste
  • 2 tbsp olive oil
  • 1⁄4 tsp paprika
  • Seeds of a small pomegranate

Ingredients for Harrak Isbaao (Lentils and Pasta with Tamarind and Pomegranate):

  • 100g block of tamarind (or tamarind paste or powder)
  • 150g green lentils (or brown lentils)
  • 100ml pomegranate molasses
  • 200g macaroni (or any pasta)
  • 100ml olive oil
  • 1⁄2 large garlic clove
  • 1⁄2 cup of fresh coriander
  • Salt and pepper to taste

To garnish:

  • 2 tbsp flour or (bread crumbs)
  • 1⁄2 onion, finely sliced
  • 1 flat bread (tortilla, flat bread, pitta bread)
  • 300ml vegetable oil for deep frying
  • 1 pomegranate, seeds removed (Majeda will show you how to remove the seeds)
  • 1⁄2 cup of fresh coriander

EQUIPMENT NEEDED:

  • 2 Saucepans
  • 2 Frying pans
  • 1 Large serving dish
