About the host

Born in Sudan, host Negla was taught how to cook by her grandmother, after her mother passed away when she was young. Forced to leave Sudan because of war, Negla had to cook for her family when they arrived in the UK as refugees. Her love of cooking grew over the years, and soon she was trying all sorts of different dishes, pairing her own recipes with local ingredients. Bristol-based Negla now enjoys nothing more than sharing her experience and culinary skills through her cookery classes.

What you'll need

Ingredients for the chicken/sauce:

  • 3 tbsp neutral oil
  • 1 onion
  • 300g chicken
  • 1 carrot
  • 100g green beans
  • 75g tomato puree
  • 1 tsp chilli powder
  • 1 tsp Lebanese 7 spice (optional)
  • 1⁄2 tsp cinnamon
  • 1⁄2 tsp black pepper
  • 1⁄2 tsp ground ginger
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 5 garlic cloves
  • 1 Maggi cube (or chicken stock
  • cube)
  • 350ml water

For the rice:

  • 3 tbsp neutral oil
  • 150g rice
  • 1 clove of garlic
  • 300ml water
  • 1 tsp salt

Ingredients for Sudanese Chili Sauce:

  • 2 green chilli
  • 1 tsp smooth peanut butter
  • 1 garlic clove
  • 1⁄2 lime (or lemon)
  • 60ml water

EQUIPMENT NEEDED:

  • Knife
  • Chopping board
  • Large pot with a lid
  • A saucepan
  • A vegetable peeler
  • Bowl
  • Wooden spoon
  • A food processor or a mortar and
  • Pestle
