This online class gives you a taste of authentic Albanian cuisine, teaching you how to make Jahni (meat stew) and petulla me kungulleshka (courgette pancakes) the Albanian way.

The London-born organisation not only helps to support the lives of these talented cooks but breaks down social and linguistic barriers, offering a glimpse into their world as they share anecdotes, traditions and culinary practices that are part of their culture.

About the host

Host Deshira, who was born in Albania, in southeastern Europe, discovered her culinary talents when she was just nine years old and had to cook for her family while her mother was in hospital. Her first dish was byrek, a flaky pastry stuffed with meat, cheese or spinach. In her culture, sharing a meal is a way to form connections with others, and Deshira uses this and her passion for cooking as a source of positivity in the face of hardship.

What you'll need

Ingredients for Albanian Jahni (meat stew):

  • 100g mutton, chopped into large cubes and marinated overnight
  • 1 carrot
  • 1⁄2 large green chilli or 1⁄2 tsp chilli flakes
  • 2 red onions
  • 4 to 5 cloves of garlic
  • 2 tbsp ghee (or sunflower oil)
  • 1 x 400g tin of chopped tomato
  • Handful of parsley (and/or dill)
  • Salt and pepper
  • Overnight marinade:
  • 1 tsp black pepper
  • 1 tsp paprika
  • 1 tbsp vegetable oil
  • 1 pinch of salt
  • 1 tsp of dried chillies

Ingredients for Petulla me Kungulleshka (courgette pancake):

  • 1 medium courgette
  • Salt for drawing out water from courgettes
  • 50g cheddar cheese
  • Handful of parsley
  • 1⁄2 tsp salt
  • 1⁄2 tsp pepper
  • 1 egg
  • 100g plain flour
  • Vegetable oil

EQUIPMENT NEEDED:

  • 1 Large bowl
  • 1 Grater
  • 1 Sieve
  • 2 Frying pans
  • 1 Large pot
  • 1 Oven tray
  • Kitchen paper/baking paper
  • 1 Slotted spoon
